Kashmiri Kahwa

It is a hot beverage much like a better version of tea, which contains high concentrations of cinnamon and green cardamom and other herbs and spices. It is refreshing and extremely beneficial for your health. Even though the drink is Kashmiri, its name kahwa is a word of Arabic origin and therefore also known as Arabic Kahwa.

The drink contains boiled tea leaves with other herbs and spices like saffron and cardamom and cinnamon as mentioned above. Often, Kashmiri rose petals are added to give it a delicious aroma. People take this tea with honey or sugar and even almonds and walnuts at times! It is a great way to start your day and give your health a much needed boost.

Preparation time: few minutes
Cooking time: 10 minutes
Serves: 4 people

4 teaspoons of Kashmiri green tea
2 tablespoons of sugar
4 pinches of kesar or saffron strands
2 crushed pods of green cardamom or elaichi
8 pieces of chopped badam or almonds
A half inch piece of cinnamon (dal chini)
2 cloves or laung
The steps to making this tea are very basic and simple. As long as you get the proportions right, there is no way you can go wrong. While the given measurements are for four people, you can adjust it to make it for one or two.

Step 1
Take three cups of water in a pot or any other utensil you use for making tea. Add the cinnamon, cardamom and cloves to it and boil for ten minutes.

Step 2
Add the tea leaves and let it steep over a low flame.

Step 3
While the tea leaves are being infused, take the saffron strands and dissolve them in some water, rubbing each of them gently. Don’t be too rough. You don’t want to break or crush them. You just have to infuse the flavour into the little water that you have taken.

Step 4
Strain the tea in a cup. Then add the saffron infused liquid to it. Add the almonds and voila! Your kahwa is ready to be served.

Variations to Kahwa Recipe
There are a number of variations that you can make in this recipe. For example, you may use honey instead of sugar. In that case you shall have to use your discretion and make sure that you add it in proportion. You could even add walnuts instead of or along with the almonds. Walnuts too are good for your health and Kashmiri walnuts are as famous as their almonds.

Serve it while it is still hot, because cold kahwa is not as tasty and completely changes your outlook towards the recipe. Kashmir being a cold place has tea as one of its most important beverages. On winter mornings white with snow, a hot cup of kahwa is like nectar sent by the gods! It rejuvenates and warms you from within. The herbs and spices all boost your immunity system and make your body healthier.
