Modak with Cardamom and Coconut Chips
Modak with Cardamom and Coconut Chips is a modern twist on the classic Modak, blending the traditional flavours of Maharashtra with luxurious ingredients. Infused with the aromatic essence of Emperor Akbar Cardamom and enriched with the creamy goodness of coconut white chocolate, this recipe promises a unique and delectable treat.

Ingredients:

1 cup - Cane White Sugar
1/2 cup - Cocoa Butter
1 cup - Whole Milk Powder
1/2 cup - Skimmed Milk Powder
1/4 cup - Coconut Milk Powder
1 teaspoon - Ground Cardamom (Freshly grind whole cardamom from Emperor Akbar for the rich aroma and best flavour)
1/4 cup - Coconut Chips
1 teaspoon - Emulsifier (Sunflower Lecithin)

Directions:

1. Melt Cocoa Butter: In a heatproof bowl, gently melt the cocoa butter over a double boiler, stirring occasionally until completely smooth.
2. Prepare Dry Ingredients: In a separate bowl, mix together the whole milk powder, skimmed milk powder, and coconut milk powder.
3. Combine Ingredients: Gradually add the dry ingredients to the melted cocoa butter, stirring continuously to ensure a smooth and lump-free mixture. Add the cane white sugar and continue to stir until the sugar is fully dissolved.
4. Add Flavours: Stir in the ground cardamom and emulsifier (sunflower lecithin) until well incorporated.
5. Mix in Coconut Chips: Gently fold in the coconut chips, ensuring they are evenly distributed throughout the mixture.
6. Shape the Modaks: Pour the mixture into Modak molds or shape into small, bite-sized pieces by hand. Allow the Modaks to set at room temperature or refrigerate until firm.
