Ingredients:
1 cup cashew nuts (kaju)
1/2 cup sugar
1/4 cup water
1/2 teaspoon ground cardamom (grounded from fresh Emperor Akbar Cardamom pods)
1 tablespoon ghee (clarified butter)
Edible silver leaf (optional, for garnish)
Recipe:
Prepare Cashew Powder: In a blender, grind the cashew nuts into a fine powder. Be careful not to over-blend, as it can turn into cashew butter.
Make Sugar Syrup: In a pan, combine the sugar and water. Heat over medium flame, stirring until the sugar dissolves. Bring to a boil and cook until it reaches a one-thread consistency (about 5-7 minutes).
Combine Ingredients: Reduce the heat and add the cashew powder and ground cardamom to the sugar syrup. Mix well to avoid lumps.
Cook Mixture: Stir continuously on low heat for about 5-8 minutes until the mixture thickens and begins to leave the sides of the pan.
