Cardamom Phirni Diwali Special

Phirni is a traditional Indian dessert that adds a creamy, indulgent touch to any festive celebration, and during Diwali, it becomes a standout dish with the enchanting flavor of cardamom. This rich rice pudding, typically made with ground rice, milk, and sugar, flavor it with Emperor Akbar Cardamom and garnish with nuts and saffron. Served chilled in earthen pots or bowls, Cardamom Phirni is not only a delightful treat but also a symbol of hospitality and celebration, making it perfect for sharing with family and friends during the Festival of Lights.

 

Ingredients:

1/4 cup rice (preferably basmati)

1 liter full-fat milk

1/2 cup sugar (adjust to taste)

1/2 teaspoon ground cardamom (grounded freshly from fresh Emperor Akbar Cardamom pods)

2 tablespoons ghee (clarified butter)

A handful of chopped nuts (almonds, pistachios)

A few strands of saffron (optional)

1 tablespoon rose water (optional)

 

 

Recipe:

Soak Rice: Rinse the rice thoroughly and soak it in water for about 2-3 hours. Drain and set aside.

Grind Rice: In a blender, grind the soaked rice into a coarse paste, adding a little water if necessary to achieve a smooth consistency.

Boil Milk: In a heavy-bottomed pan, bring the milk to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.

Add Rice Paste: Once the milk is boiling, lower the heat and add the rice paste. Stir well to combine.

Cook Mixture: Cook the mixture on low heat, stirring continuously for about 15-20 minutes until it thickens.

Sweeten and Flavor: Add sugar, ground cardamom, and rose water (if using). Mix well and cook for another 5 minutes.

Incorporate Nuts and Saffron: Stir in the chopped nuts and saffron strands. Remove from heat and let it cool slightly.

Set Phirni: Pour the mixture into individual serving bowls or earthen pots. Let it cool at room temperature, then refrigerate for a few hours to chill.

Serve: Garnish with additional chopped nuts and a sprinkle of cardamom before serving. Enjoy the creamy, fragrant Cardamom Phirni with loved ones during your Diwali celebrations!
