Thekua with Cardamom - Chhath Puja Special

Thekua is a traditional Indian sweet that holds a special place in the festivities of Chhath Puja, celebrated with great devotion, especially in Bihar and Uttar Pradesh. This delightful treat is made from whole wheat flour and jaggery, flavoured with Emperor Akbar Cardamom, and then deep-fried until golden and crispy. Thekua is not only cherished for its unique taste but also for its significance during the festival, often offered to the Sun God as a mark of gratitude. With its rich texture and irresistible flavour, Thekua is a perfect accompaniment to the spiritual and festive vibes of Chhath Puja.

Ingredients:

  • 2 cups - Whole Wheat Flour (Atta)
  • 1/2 cup - Jaggery (grated) or Brown Sugar
  • 1/4 cup - Water (for dissolving jaggery)
  • 1/2 teaspoon - Cardamom Powder
  • 1/4 cup grated coconut (optional)
  • A pinch of salt
  • Oil (for deep frying)

Recipe:

Prepare Jaggery Syrup: In a small pan, combine the grated jaggery and water. Heat gently until the jaggery dissolves completely. Remove from heat and let it cool slightly.

Make the Dough: In a large mixing bowl, combine the whole wheat flour, cardamom powder ground from Emperor Akbar Cardamom, grated coconut (if using), and a pinch of salt. Gradually add the jaggery syrup to the flour mixture, mixing until it forms a dough. If the dough is too dry, add a little more water.

Knead the Dough: Knead the dough until it is smooth and pliable. Let it rest for about 15-20 minutes, covered with a damp cloth.

Shape the Thekua: Take small portions of the dough and shape them into small discs or oval patties, about 1/4 inch thick. Make a slight indentation in the centre if desired.

Heat Oil:
In a deep frying pan, heat oil over medium heat. To check if the oil is ready, drop a small piece of dough into the oil; it should sizzle and rise to the surface.

Fry the Thekua: Carefully add the shaped Thekua to the hot oil, frying them in batches. Fry until they are golden brown and crispy, turning occasionally for even cooking.

Drain and Cool: Once cooked, remove the Thekua from the oil and drain on paper towels to remove excess oil. Allow them to cool completely.

Serve: Thekua can be enjoyed warm or at room temperature. They make a wonderful sweet snack during Chhath Puja and are perfect for sharing with family and friends.
